Il contributo si propone di analizzare la composizione della batteria da cucina in uso tra V e VI secolo d.C. a partire dai dati offerti dagli scavi condotti ad Aquileia dall’Università di Padova e attraverso il successivo confronto con altre realtà dell’Adriatico settentrionale. Le ricerche hanno portato ad individuare alcuni contesti significativi che permettono di ricostruire le associazioni fra le diverse classi ceramiche (prevalentemente ceramica grezza, africana da cucina e comune orientale) e di valutare in che modo esse si modificarono nel corso dell’arco cronologico considerato, sia per quanto riguarda il rapporto fra produzioni locali e importazioni, sia in termini di funzionalità delle forme attestate. I dati così raccolti hanno offerto interessanti spunti di riflessione sui cambiamenti nelle tecniche di cottura verificatisi in epoca tardoantica e sui rapporti commerciali che la città di Aquileia intratteneva ancora in queste fasi con il Nordafrica, con l’area egea e con le altre regioni dell’Italia settentrionale Cooking Wares in Aquileia and the Northern Adriatic area between the 5th and 6th centuries AD: continuity and transformations.
The paper aims at analysing the composition of the kitchenware set in use between the 5th and 6th centuries AD, starting from the data provided by the excavations carried out in Aquileia by the University of Padua; in addition, a comparison was made with other sites in the northern Adriatic area. The research led to the identification of a number of significant contexts that allowed to reconstruct the associations between different ceramic classes (mainly coarse wares, African Cooking Ware and Aegean Cooking Ware) and to assess how they changed over the considered period. Both the relationship between local production and imports and the functionality of the different forms have been considered. The collected data offered interesting insights into some shifts in cooking habits that took place in Late Antiquity and into the trade relations that the city of Aquileia still entertained in these phases with North Africa, the Aegean and the other regions of northern Italy.
