Abstract
Primers of iap gene were used to develop a PCR technique for detecting Listeria in food. The use of iap primers gave good results in the detection of Listeria monocytogenes either in artificially or naturally contaminated foodstuffs. The lowest sensitivity limit for the PCR reaction was ÌO'-IO2 Listerialm\ or g product either in pure cultures or in artificially and naturally contaminated food (meat). PCR protocol seems to give better results and is very easy and fast, requiring only 30 hours to detect Listeria from meat.
