The energy balance was estimated of vertical closed stainless steel containers (500 m3 capacity) filled with grape pomace cooled during storage by dripping wine at 0 or 4 C. Refrigeration of steel containers, as well as storage in the plastics container, resulted in lower concn. of methanol, higher alcohols and short-chain ethyl esters than in grappa low-wines prepared from pomace stored in steel containers without refrigeration.
