In this work the gaschromatographic technique has been employed to determine infinite dilution activity coefficients of some VOC (volatile organic compounds) in a troglyceride, triolein. Triolein-water partition coefficients Kt/w have been evaluated and compared with octanol-water partition coefficients Ko/w. The distribution factors between water and triglyceride have a linear behaviour with the solubility in water. The determination of infinite dilution activity coefficients in thetriglyceride and the use of the correlation reported allows a quick and accurate evaluation of the relative solubility.
