Ln. mesenteroides subsp. mesenteroides and Ln. carnosum have been isolated from bresaola (salted meat) and "crescenza" cheeses. They have been recognized as being responsible for the bloating of packaged food. Some sanitizers have been indicated, which are useful in eliminating biofilms.
